Forest Fruits Hand Pies made with love under 30 minutes! Store bought puff pasty and fresh berry filling, some coarse sugar and there you have a bit messy hand pies to enjoy!

Ingredients

  • 1 Store bought puff pastry ( 10 x 16 inches )
  • Hand pie filling:
  • 2 cups forest fruits ( blueberries, blackberries, raspberries, redcurrants ... )
  • 5 Tbsp sugar
  • 2 Tbsp corn starch
  • 1 egg white + 1 Tbsp coarse sugar to garnish
  • Icing sugar to sprinkle before serving, optional

Instructions

  1. On low heat, in medium sized pan, combine forest fruits with sugar.

  2. When sugar is melted, add corn starch to boil all together for 2 minutes. Leave aside.

  3. Preheat the oven to 180 C / 356 F.

  4. Cover baking sheet with parchment paper.

  5. Roll out the puff pastry and cut the dough to have 6 circles, each of 5 inches in diameter.

  6. Place 1 Tbsp of berry filling on one side of each circle.

  7. Brush lightly the edges with egg white to help seal them when you fold over a crimp.

  8. Seal the edges with the fork.

  9. Egg wash the hand pies cover, and sprinkle with coarse sugar.

  10. Cut little slits on the top of each hand pie to help vent the steam out.

  11. Bake for 16 minutes.

  12. Before serving, sprinkle with powdered sugar, optional.
