
Creamy Shrimp Risotto is Italian rice dish recipe made with arborio rice. Creamy and done in 30 minutes, with parmesan cheese, it makes rich festive lunch or week dinner after your busy day!
Put butter or olive oil in large pan ( I use 10 inches in diameter ) and melt it.
Add shrimps and cook for 5 minutes over medium heat.
Add rice and salt to taste. Let it cook for minute or two.
Then add white wine and let it slowly boil.
Don't stir or mix. Just gently shake the pan occasionally.
Ladle vegetable or chicken stock in 3 batches during 20 minutes of cooking rice.
When almost done, reduce heat, add heavy cream and parmesan to combine.
Serve immediately. Add extra freshly grated parmesan cheese and chopped fresh parsley leaves, if desired.
