Christmas Lamingtons

Christmas Lamingtons are festive twist of well-known Australian recipe. Perfect surprise for children!

Ingredients

  • Ingredients for Lamington sponge:
  • 2 eggs
  • 6 Tbsp sugar
  • ½ Tbsp vanilla extract
  • 1 ½ cup 00 flour
  • 1   ½ Tbsp baking powder
  • 1/3 cup milk
  • 1/3 cup vegetable oil ( no olive oil)
  • Pinch of salt
  • Extra butter to coat the parchment paper 
  • Ingredients for glaze:
  • ½ cup white chocolate chips
  • 1/3 cup milk
  • 5 Tbsp butter
  • 2 cups dessicated coconut for coating

Instructions

  1. Preheat the oven to 180C/365F.

  2. Cover 8 x 8 inches baking dish with parchment paper and leave aside.

  3. In medium sized bowl, mix all the ingredients for Lamington sponge.

  4. Pour the batter into the baking dish and bake for 20 minutes or until a toothpick inserted in the middle comes out clean.

  5. Once baked, leave it in the pan and cool for 40 minutes.

  6. While your sponge is cooling, melt chocolate, butter, milk, and sugar on medium heat to get syrup consistency.

  7. Cut your dense sponge in triangles 2 inches wide at the base, towards the top to reach 4 inches height. For details please look the photo above.

  8. Sip dessicated coconut into shallow bowl.

  9. Once your trees are cut, dip them into warm syrup and coat them with coconut.

  10. Place them standing on a flat and clean surface.

  11. Serve them with stars on the top, optionally.
