Ingredients

  • 18 Tbsp flour
  • 1 egg
  • 3 Tbsp sour cream
  • ¾ cup milk
  • 1 Tbsp baking powder
  • 3 drops lemon extract or lemon zest to taste
  • 2 Tbsp chia seeds
  • 1 cup blueberries + to garnish
  • 4 Tbsp sugar
  • Whipped cream, optional
  • fresh blueberries to garnish

Instructions

  1. In a bowl, mix egg, sour cream, lemon extract, milk and chia seeds.
  2. Add flour, baking powder and sugar. Mix well.

  3. Gently combine blueberries to keep them whole.

  4. Ladle the batter onto a hot griddle. Cook up to 2 mins on each side.

  5. Repeat with remaining batter, making 11 pancakes.
  6. Serve with whipped cream or any spread to taste. Garnish with fresh blueberries.
