Biscoff Rocky Road is easy delicious rocky road for all crunchy Biscoff cookies, white chocolate and marshmallows fans. Done in 25 minutes then refrigerated to cut and serve.
Cover 8 x 8 inches baking dish with parchment paper and spray it.Leave aside.
Place a large pot on a stove top, fill it up to 2/3 with water and cover with fitting heat proof bowl.
Stirring constantly using spatula, melt unsalted butter, chocolate chips, marshmallows, and cookie butter. You get sticky mixture.
Add crushed Lotus Biscoff cookies and combine.
Drop the mixture into prepared pan, oil your hands, press and flatten the mixture.
While still warm, you can garnish your dessert with marshmallows and crushed cookies to enhance Biscoff flavour.
Cool for one hour, cut to squares and serve.
