Ingredients

  • 2 ½ cup coconut instant pudding and pie filling
  • 1 cup milk
  • 3 burger buns, cubed ( 2/3 of each is enough )
  • 2 bananas, sliced
  • Pinch of lemon juice
  • 1 egg
  • vanilla extract to taste
  • 1 tsp Golden rum, optional
  • Butter for the dish
  • Coconut chips to garnish, optional

Instructions

  1. Cut burger buns into cubes ( approx. 1 inch ) and soak them in milk.

  2. Place banana slices in shallow bowl and sprinkle them with lemon juice to keep the original colour.

  3. Preheat the oven to 180 C / 356 F.

  4. Butter the baking dish.

  5. In a small bowl, mix egg, vanilla extract and golden rum.

  6. Boil the coconut pudding according to the instructions on the box.

  7. Add egg mixture to coconut pudding while the pudding is still warm.

  8. Cover the dish with half of soaked cubes. Top with layer of sliced bananas.

  9. Pour half of the pudding mixture over the first layer.

  10. Arrange remaining cubes and banas and cover with the other half of pudding mixture.

  11. Bake for 20 minutes.

  12. Garnish with coconut chips to taste and serve warm.
