Apple Cider Cinnamon Bread

Apple Cider Cinnamon Bread is quick bread recipe with fermented apple cider. It supports baking powder to react quickly and there you have sweet and rich harvest apple loaf done in no time! Coated with cracky cinnamon glaze, made with fresh apples, it makes apple cider donuts bread everybody loves!

Ingredients

  • 2 cups all purpose flour
  • 1 Tbsp baking powder
  • Pinch of salt
  • 1 tsp ground cinnamon
  • ½ tsp ginger powder
  • 3 ½ Tbsp unsalted butter, room temperature, sliced
  • 2 ½ Tbsp sour cream
  • ¾ cup white sugar
  • 3 eggs
  • ½ cup fermented apple cider
  • 3 apples, peeled,cored and chopped ( Granny Smith )
  • 1 Tbsp fresh lemon juice
  • Ingredients for cinnamon glaze:
  • 7 Tbsp powdered sugar
  • ½ tsp ground cinnamon
  • 3 tsp milk

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. Grease and cover with baking paper a 9 x 5 inches bread pan.

  3. In medium sized bowl, combine flour, baking powder, salt, cinnamon, and ginger.

  4. In large bowl, mix butter and sugar. Add eggs, one at a time. Add, dry ingredients and liquid ones (apple cider and sour cream). Mix until combined.

  5. Gently combine chopped apples with lemon juice and fold into the batter, using spatula.

  6. Pour the batter into the bread pan and bake for 45 minutes or until toothpick inserted into middle comes out clean.

  7. Leave to cook for 15 minutes and take the bread out to cool completely.

  8. In a mug, combine icing sugar, cinnamon, and milk to get smooth glaze.

  9. Drizzle the glaze over the top of cool bread before cutting the slices.
