Amarena Cherry Biscuits

Amarena Cherry Biscuits made with pan di Spagna, Amarena Cherry Jam and chocolate.

Ingredients

  • Ingredient for short crust pastry:
  • 2 cups cake flour
  • 8 ½ Tbsp butter,room temperature
  • 7 Tbsp white sugar
  • 1 egg
  • 1 egg yolk
  • Pinch of salt
  • Ingredients for filling:
  • 2 ¾ cups sponge crumbs
  • 1 cup Amarena cherry jam
  • 3 Tbsp semi sweet chocolate chips, melted
  • 1 Tbsp butter
  • 1 Tbsp bitter cocoa powder
  • 2 Tbsp ground hazelnuts
  • 1 tsp dark rum
  • Ingredients for glaze:
  • ½ egg white
  • 2 drops fresh lemon juice
  • 6 Tbsp powdered sugar
  • Cherry jam for the stripes

Instructions

  1. Quickly combine,using your clean hands, a shortcrust pasty and leave in the fridge for 30minutes.

  2. Meanwhile, make the filling. On flat clean surface combine all the filling ingredients and form rectangular log (9 x 3 ½  inches).

  3. Roll out cooled shortcrust pasty to have 10 x 10 inches shape. Place your amarena log in the middle and cover it with shortcrust. Patch if needed.

  4. Preheat oven to180 C / 356 F.

  5. Turn seam side down.

  6. Quickly mix egg white, lemon juice, and powdered sugar in a mug.

  7. Glaze the top of your log with it and make two rows using your grill skewer.

  8. Fill the rows with amarena cherry jam.

  9. Cut your log horizontally, about 1 inch wide to get 10 biscotti ( cookies).

  10. Transfer them on baking sheet covered with parchment paper and bake for 20 minutes.
