Amarena Cherry Biscuits made with pan di Spagna, Amarena Cherry Jam and chocolate.
Quickly combine,using your clean hands, a shortcrust pasty and leave in the fridge for 30minutes.
Meanwhile, make the filling. On flat clean surface combine all the filling ingredients and form rectangular log (9 x 3 ½ inches).
Roll out cooled shortcrust pasty to have 10 x 10 inches shape. Place your amarena log in the middle and cover it with shortcrust. Patch if needed.
Preheat oven to180 C / 356 F.
Turn seam side down.
Quickly mix egg white, lemon juice, and powdered sugar in a mug.
Glaze the top of your log with it and make two rows using your grill skewer.
Fill the rows with amarena cherry jam.
Cut your log horizontally, about 1 inch wide to get 10 biscotti ( cookies).
Transfer them on baking sheet covered with parchment paper and bake for 20 minutes.
