Ingredients

  • Ingredients for main dish:
  • 1.3 lb cod fillet, cut to three pieces
  • 2 Tbsp olive oil
  • 1 cup tomato sauce
  • Garlic and ground black pepper to taste
  • 1 cup water
  • 1 onion, quartered
  • Rosemary and chopped parsley leaves to garnish
  • Ingredients for polenta side dish:
  • 3 cups water
  • Salt to taste
  • 12 Tbsp polenta

Instructions

  1. In a small bowl, mix tomatoes sauce, garlic and ground black pepper and water. Leave aside.

  2. Heat a skillet over medium heat and add olive oil. Place the cod fillets into the skillet and season with salt to taste.

  3. Cook for 2 minutes or until the fish gets nice golden colour.

  4. Then carefully turn the cod over and cook for another 2 minutes.

  5. Pour tomato sauce mixture over cod fillets together with quartered onion.

  6. Gently boil on low heat for 10 minutes.

  7. If necessary, gently shake the skillet instead of mixing the ingredients with spatula. ( You do the same with brodetto! :-) )

  8. While the cod is slowly boiling, mix polenta ingredients in medium sized pot and bring to boil.

  9. Boil stirring constantly for 5 minutes.

  10. Serve immediately.
