Rotisserie Chicken Enchiladas

Rotisserie Chicken Enchiladas are easy chicken rotisserie dish with corn tortillas, Mexican way, with sour cream. Healthy guacamole and cheese filling make it your new favorite dish.

Ingredients

  • 8 corn tortillas, approx 10 inches diameter
  • 8 Tbsp Guacamole Sauce
  • 3 cups Gouda cheese, shredded
  • 2 cups Cheddar cheese, shredded
  • 4 cups Rotisserie Chicken, shredded
  • 2 egg yolks
  • Salt to taste
  • 2 cups sour cream
  • Jalapeno slices to taste

Instructions

  1. Preheat the oven to 180° C / 356° F.
  2. Spray the pan (10 x 10 inches).
  3. Place one tortilla on shallow plate and spread 1 Tbsp of Guacamole over it.

  4. Fill tortilla with the shredded chicken, cheeses and jalapenos to taste.

  5. Roll corn tortilla and place it seam side down into the baking dish.

  6. Repeat steps 3 to 5 with all the tortillas.

  7. If any cheese left, spread it over the top of chicken enchiladas placed in the baking dish.

  8. Whisk sour cream and egg yolks in a small bowl and spread over the top of <your recipe.

  9. Bake for 15 minutes at 180° C / 356° F.

  10. Turn the oven up to 190° C / 374° F. and bake the tortillas for 5 more minutes.
  11. Serve immediately.
