We usually enjoy physalis aka golden berries during late December and eary January. They are especially tasty if dipped in chocolate, added to fruit salad, salsa, fruit based muffins, Pavlova, banana smoothie, and preserves. This year is not an exception and I was very happy to find several 100 gram packages waiting for me in tropical fruits department. Besides, seeds are available so anyone interested in having them in the garden can start growing them. It did not work for us since it’s too hot on our balconies and the plants can not stand it.

Physalis Peruviana is also known as „ love in the cage“ since fruits are packed in wrapping, hiding the berry. Also, some people name it „Peruvian strawberry“ which is strange since the taste is of pineapple and licorice in one.

How to make physalis liqueur?

The best is to find a suitable glass jar for a start. Our glass bottle has 2 ½ cups volume (600 ml) in the lower rounded part and this is enough for this small batch of liqueur.

Once you have your physalis fruit ready, combine it with sugar and place into the jar. Then you mix vodka and wine in separate dish and pour over the fruits. The last step is adding anise stars. Close tightly and leave to rest at room temperature for 4 weeks. Gently shake every other day so sugar dissolves properly. After 28 days, your physalis liqueur is ready for use.

Anise seeds match perfectly to physalis although traditionally used in savoury recipes particularly with meats. It often is added whole to soups, stews, and braising broths, to which it adds a sweet-licorice-peppery flavor. Anise Star Cookies are another sweet exception to the rule. Star anise can be used whole or ground.

 

Is Physalis a Superfood?

Like the goji and açai berries before it, the golden berry, or Physalis Peruviana, is a nutrient-packed, odd-tasting berry. With a name like that and a mysterious origin story in the Peruvian and Colombian mountains, golden berries are well placed to become the next superfood.

Ingredients

  • 2 ½ cup physalis (250 grams, once unwrapped,washed and halved)
  • 8 Tbsp brown sugar
  • 1 cup Vodka
  • ½ cup dry white wine
  • 3 anise stars

Instructions

  1. Once you unwrapped and cleaned physalis berries you combine them with brown sugar. place them to the bottom of your glass jar.

  2. Combine vodka and white wine in another dish and pour over the fruits and sugar.

  3. Add 3 anise stars and tightly close the bottle.

  4. Gently shake the bottle every other day and store your liqueur recipe at room temperature for 4 weeks before use.

Note:

Once ready to consume, store your batch in cool and dark place ( refrigerator is the best. That way you can enjoy it for 3 years).
