I did not use the loaf pan or dutch oven but simple sheet pan, covered with baking paper. Also, it was not necessary to use bread machine or stand mixer : I did it all simple old fashioned way, on a flat surface, using my hands.
This bread recipe is really simple to make if you stick to the instructions, make the dough, leave to rise for 70 minutes and there you have, homemade rye bread you’ll enjoy whatever way you prefer.

My experience with making rye bread is not bad. Perhaps it is the ration of this recipe originated from my Dannish friend.

Rye Bread Recipe

Ingredients
- 1 Tbsp + 1 tsp fresh yeast
- 1 Tbsp honey
- 1 cup + 4 Tbsp warm water ( 264 grams )
- 2 cups rye flour
- 1 tsp salt
- 3 Tbsp rye flour to form a dough
Instructions

Combine 5 Tbsp of warm water from total quantity and combine, in a mug, with yeast, honey and 1 Tbsp of rye flour. Leave to rise for 10minutes.

Combine water with salt, in another mug so the salt dissolves.

Prepare sheet baking dish and cover it with baking paper. Leave aside.

On a flat, clean surface, combine, using one hand ( I suggest non dominant one )and combine flour and yeast . Slowly add water, little by little.

You will have to gather the dough with spatula, using your dominant hand since the dough you'll get is quite sticky.

Use 3 Tbsp of flour to gather the dough together and form a ball.

Transfer it on the baking paper, for a rounded dough, cover with tea towel and leave to rise for 60 minutes.

Preheat the oven to 200 C / 392 F.

Rise the dough for another 10 minutes. It takes that long for oven to get the required temperature

Sprinkle the dough with flour, score the surface and bake for 27 minutes.

Take out from the oven, cool completely and enjoy.
