Finally, we have received our batch of Rolos. They were late for my son’s birthday so I made another favourite instead and it made my plans even better since there is another kid’s treat to post.
Here are our Rolo Turtle Cookies from scratch are and I believe it’s never too late to keep the recipe for any holidays or just because you love Rolos or turtle cookies.
So here they are, both combined and garnished with chocolate ganache and milk jam ( dulce de leche ).
It is such a lovely set of ingredients, especially if you enjoy chocolate combined with caramel and pecans.

As you can see these are not pretzel turtle cookies and chocolate chips are ment for drizzle only.

Rolo candy is in the middle of each cookie and is melted while in the oven ! So, ones you bite it, the middle is chewy, melted rolo pecan taste releasing ! Do you find it inviting ?

I confess, we did not know how Rolos are popular and they were not our first chioce to try. So, for all of you reading this post, let me write few words about this beautiful chocolate caramel treats :
Rolos are roll – styled chocolates with caramel middle. They were launched in 1937 in Europe and after acquired USA licence by The Hershey Company, they were launched in America in 1956. So says Mr. Google.
Today, Rolo is available as the base for so many sweet and diary products : ice creams, muffins, birthdays cakes, desserts, cake bars, doughnuts, mini Rolos, big Rolos, yoghurts and Easter eggs.

Rolo Turtle Cookies

Ingredients
- Ingredients for the cookies:
- 16 Tbsp unsalted butter, room temperature
- 3 Tbsp bitter cocoa powder
- 2 ½ cup all purpose flour
- 1 egg
- ½ cup icing sugar
- 1 Tbsp baking powder
- ¾ cup chopped pecans
- 30 Rolo candies
- Ingredients for chocolate drizzle:
- 3 Tbsp semi sweet chocolate chips
- 2 Tbsp sour cream
- 2 Tbsp water
- Ingredients for dulce de leche drizzle:
- 3 Tbsp dulce de leche
- 1 Tbsp water
Instructions

On flat clean working surface, combine, using your hands, butter, cocoa powder, flour, egg, icing sugar and baking powder.Leave the cookie dough aside.

Preheat the oven to 180 C / 356 F and cover two sheet pans with parchment paper.

Put chopped pecans in shallow bowl and prepare Rolos to be at hand.

Scoop 1 Tablespoon of dough, roll it into a ball. Flatten with palms of hands and place one unwrapped Rolo chocolate in the center. Wrap dough around Rolo, sealing it.

Roll cookie dough ball in chopped pecans to coat all over.

Place the ball on baking paper. One pan is enough for 15 balls.

Repeat for 30 cookie balls.

Bake for 6 minutes and then open the oven and press each cookie ball using spatula to make them flat. Continue baking for another 6 minutes.

Cool completely. While cooling, make the drizzles.

To make chocolate drizzle, combine chocolate chips, sour cream and water in small pot on low heat until smooth and melted.

To make dulce de leche drizzle, combine dulce de leche and water in a small pot on low heat until smooth and melted.

Drizzle both chocolate and dulce de leche over the cooled cookies.

Store cookies in an airtight container for seven days.
