Beside apples, blueberries and cherries, mangoes are absolutely perfect to use for this kind of sweet, easy and simple dessert. Since mango fruit is juicy, some cornstarch is needed and I combined it with chia seeds. They thicken the filling and bring healthy kick to these tasty sweet bars.

Mango Chia bars can be made with both fresh and canned fruit. If you make this dessert using canned ones, keep the syrup since some liquid is required to add to the crust and if you use syrup instead of sour cream, it gives perfect results since you have mango flavours both in crust and filling.

  • Ingredients for the crust:
  • 7 Tbsp unsalted butter, room temperature : 100 grams
  • 2 Tbsp sugar
  • 1 ยฝ cup all purpose flour
  • ยพ tsp baking powder
  • Pinch of salt
  • 2 egg yolks
  • 1 Tbsp mango syrup or sour cream
  • Ingredients for the filling:
  • 2 cups mango, chopped
  • 1 Tbsp lemon juice
  • 2 Tbsp cornstarch
  • 3 Tbsp syrup or water
  • 1 Tbsp chia seeds
  • Icing sugar to taste,optional


  1. Cover 7 x 7 inches pan with baking paper and spray it. Leave aside.

  2. Preheat the oven to 180 C / 356 F.

  3. Combine all crust ingredients on clean working surface and pres half of it to the bottom of the pan.

  4. Bake for 15 minutes.

  5. While the crust is in the oven, gently boil mango, lemon juice, cornstarch, syrup and chia seeds for 4 minutes.

  6. Pour the mixture into the pan and sprinkle the remaining crust on the top.

  7. Bake for additional 20 minutes.

  8. Take the bars out, leave to cool and serve.

  9. You may dust the bars with icing sugar before serving.
