You can make Mango Chia Bars both with fresh and canned fruit. If you use canned version, keep the precious syrup since crust asks for some extra liquid. If you use leftover syrup instead of sour cream, it results with mango flavors both in crust and filling.

Ingredients

  • Ingredients for the crust:
  • 7 Tbsp unsalted butter, room temperature : 100 grams
  • 2 Tbsp sugar
  • 1 ½ cup all purpose flour
  • ¾ tsp baking powder
  • Pinch of salt
  • 2 egg yolks
  • 1 Tbsp mango syrup or sour cream
  • Ingredients for the filling:
  • 2 cups mango, chopped
  • 1 Tbsp lemon juice
  • 2 Tbsp cornstarch
  • 3 Tbsp syrup or water
  • 1 Tbsp chia seeds
  • Icing sugar to taste,optional

Instructions

  1. Cover 7 x 7 inches pan with baking paper and spray it. Leave aside.

  2. Preheat the oven to 180 C / 356 F.

  3. Combine all crust ingredients on clean working surface and press half of it to the bottom of the pan.

  4. Bake for 15 minutes.

  5. While the crust is in the oven, gently boil mango, lemon juice, cornstarch, syrup and chia seeds for 4 minutes.

  6. Pour the mixture into the pan and sprinkle the remaining crust on the top.

  7. Bake for additional 20 minutes.

  8. Take the bars out, leave to cool and serve.

  9. You may dust the bars with icing sugar before serving.
