Just as I decided to write about lemons coming our way, it occurred to me that fresh fruits season is not coming that soon to everybody. It really depends on how long winter lasts at your place and when exactly it has arrived so Winter Fruit Salad with Chia should be described as simple as possible : vitamins booster ! We enjoy it quite often since it is so light and refreshing.
It also served as a push to add new category to my blog; we do not consider fruits to be dessert since we do not eat fresh fruits after main course but have raw fruits in the mornings to use the most of healthy ingredients at the beginning of the day.
You notice I’ve added apricots. The ones I used are canned halves. To have the best use of it all, I have combined chia seeds with syrup so no extra sugar is added. With all of these fruits and their natural sugars, it is not really needed.
Winter Fruit Salad with Chia
Ingredients
- 3 Tbsp apricot syrup or fruit juice
- 1 Tbsp chia seeds
- 3 tangerines
- 1 apple
- 1 pomegranate
- 1 kiwi
- 7 apricot halves
- 1 banana
- Mint leaves to garnish
Instructions

Open canned apricots in syrup.

In medium sized bowl, combine cubed apple, sliced banana and kiwi and peeled tangerines and pomegranate. Add sliced apricots.

In a small bowl, mix apricot syrup and chia seeds and drizzle over fruits and gently toss.

Garnish with mint leaves and serve.
