Bacon Roast Chicken, overnight marinated is super moist bacon wrapped chicken recipe for the best smoky flavors ever!

Ingredients

  • Ingredients:
  • 1 chicken approx. 3 lb or 2 larger chicken breasts
  • 4 Tbsp sunflower oil
  • 12-14 smoked bacon slices
  • Vegetables and / or pasta to taste
  • Cayenne pepper and salt to taste
  • MARINADE:
  • 12 cups water
  • 1 Tbsp salt
  • 1 tsp sugar
  • 1 cup white wine
  • 2 bay leaves
  • 1 onion, chopped
  • 2 carrots, chopped
  • ground black pepper to taste

Instructions

  1. INSTRUCTIONS:
  2. Evening before you bake the chicken, boil the marinade. Leave aside to cool.

  3. Put meat in large bowl and cover with marinade. Leave overnight in the fridge.

  4. Next day, preheat the oven to 200 C / 392 F.

  5. Spray your baking dish with vegetable oil. Take the chicken out of the marinade.

  6. Place chicken in your baking dish or rimmed baking sheet.

  7. Prepare bacon lattice to place over the chicken before you start baking.

  8. Lay bacon slices ( lattice ) over the chicken. For the best results, secure with toothpicks.

  9. Bake fro 30 minutes without vegetables.

  10. Arrange with zucchini, red bell pepper, onion and carrot wedges around the chicken and continue baking for additional 20 minutes.

  11. When done, your bacon lattice looks crispy. If not, continue roasting for additional 1o minutes until juices run clear once you cut between leg and tight.

  12. You can serve meat and vegetables together or prepare pasta according to your taste and serve.

  13. Vegetables could be also served garnished with chopped garlic and aceto balsamico.
