Roasted Chicken with Bacon Cover : Lattice covered chicken; simple to make and packed with smoky flavoures.

  • Ingredients:
  • 1 chicken approx. 3 lb or 2 larger chicken breasts
  • 4 Tbsp sunflower oil
  • 12-14 smoked bacon slices
  • Vegetables and / or pasta to taste
  • Cayenne pepper and salt to taste
  • 12 cups water
  • 1 Tbsp salt
  • 1 tsp sugar
  • 1 cup white wine
  • 2 bay leaves
  • 1 onion, chopped
  • 2 carrots, chopped
  • Black peper


  2. Day before you bake the chicken, boil the marinade. Leave to cool.
  3. Put meat in large bowl and cover with marinade. Leave to rest overnight.
  4. Next day, preheat the oven to 200 C / 392 F.
  5. Spread oil on the bottom of baking dish.
  6. Remove meat from marinade to baking dish.
  7. Cover meat with bacon lattice. For the best results, attach them to meat with toothpicks.
  8. Bake for 30 minutes without vegetables.
  9. Add zuchini, red bell pepper, onion and carrot wedges to taste and bake for additional 20 minutes.
  10. When done, you can serve meat and vegetables together or prepare pasta according to your taste and serve.
  11. Vegetables could be also served garnished with chopped garlic and aceto balsamico.
