Strawberry Rosemary Jam

  • 4 cups strawberries, fresh, cut to slices
  • 4 cups sugar
  • 1 1/2 Tbsp citric acid
  • 2 Tbsp sugar mixed with 3 Tbsp pectin
  • 10-12 rosemary needles


  1. Rinse and cut the strawberries.
  2. Add sugar and leave it to rest for one hour.
  3. Prepare clean glass jars.
  4. On a medium heat, in a pot, cook the mixture for 10 minutes.
  5. Add citric acid or lemon juice and sugar mixed with pectin.
  6. Cook for another 10 minutes.
  7. If any foam appears, take it away with a spoon.
  8. Pour the jam into the glass jars and close them.
  9. Let the jars cool before stored to a cool, dry and dark place.
