Ingredients

  • Ingredients for muffins :
  • 3 tsp unsalted butter, room temperature
  • 5 egg yolks
  • 1 drop edible lavender oil or 1/3 tsp lavender flowers
  • 1 ½ cup all purpose flour
  • 1 cup + 2 Tbsp sugar
  • 2 tsp baking powder
  • 3 Tbsp bitter cocoa powder
  • 1 tsp lemon zest
  • 1 1/3 cup milk
  • 1 cup blueberries ( batter and the top )
  • Ingredients for chocolate ganache :
  • 9 Tbsp heavy cream
  • 6 Tbsp melted semi sweet chocolate

Instructions

  1. Place paper bags into 12 muffins hole pan and leave it aside.

  2. Preheat the oven to 180 C / 356 F.

  3. Mix egg yolks and butter in medium sized bowl.

  4. Add the rest of muffins ingredients and combine until you get smooth texture.

  5. Fill the paper cups up to 2/3 and insert 3 blueberries inside of every muffin.

  6. Bake for 16 minutes or until a toothpick inserted comes out clean.

  7. Take the pan out of the oven and leave to cool completely.

  8. For the ganache, melt the chocolate in a microwave.

  9. In a small pot, heat the heavy cream; do not bring to boil, just heat it and add chocolate.

  10. Combine and take away from the heat.

  11. Spread over muffins, garnish with blueberries and lavender flowers, optionally.
