  • 3 Tbsp Olive oil
  • 2 pork chops, 1 lb approx
  • 4 cups potato wedges, loosely packed
  • Salt to taste
  • 1 tsp oregano
  • 3 cups tomato salsa or chopped pelati
  • Butter and chopped parsley to garnish


  1. Preheat the oven to 180° C / 356° F.
  2. Pour the olive oil into the dish.
  3. Lay the pork chops on the bottom and place the potato wedges around them.
  4. Salt to taste and sprinkle with oregano.
  5. Cover the ingredients with salsa or pelati and bake for 90 minutes.
