Brownie Pie with Pecans

Ingredients

  • Store-bought pie crust
  • 4 eggs, separated
  • 1 cup icing sugar
  • 1 Tbsp vanilla extract
  • 4 Tbsp cocoa powder
  • 1/3 tsp baking powder
  • 5 Tbsp ground pecans
  • 1 tsp lemon juice

Instructions

  1. Roll out the pie crust.
  2. Spray a pie dish and place the pie crust in the dish (9 inches diameter). Leave aside.
  3. Preheat the oven to 180° C / 356° F.
  4. Mix the egg whites and icing sugar in a bowl until stiff peaks form.
  5. Slowly add the egg yolks, vanilla extract, baking powder, pecans and lemon juice and continue mixing with a spatula.
  6. Pour the brownie filling into the dish over the pie crust.
  7. Bake for approx 35 minutes or until a toothpick inserted into the middle comes out clean.
  8. Cool completely before serving.
  9. Serve with your favourite spread.
