Lemon Blueberry Coffee Cake is the best lemon coffee cake with fresh blueberries. Perfect dessert to enjoy with your afternoon coffee.
Preheat the oven to 175 C / 347 F.
In a medium sized bowl, combine, flour, butter, and sugar.
Cover 7x12 inches pan with parchment paper and press the crust into the bottom, using your fingers.
Bake your crust for 15 minutes.
While it is in the oven, combine sugar and flour. Add eggs and whisk together well. Add lemon juice and combine to get smooth cream. At that point you may add vanilla extract to taste.
Once you take the crust out, carefully pour the filling over it and sprinkle fresh blueberries over it.
Bake for additional 20 minutes.
Take your cake out, leave it to cool completely at room temperature, cut to squares and enjoy.
