  • 1 Tbsp sunflower oil
  • 3 cup chicken breasts, cut to stripes (approx. 1.5 lb )
  • 4 Tbsp Fajitas mix
  • 1 tsp salt
  • 3 bell peppers: green, red, yellow
  • 1 purple onion, sliced to rings
  • 1 garlic head, halved
  • 2 eggs
  • Salt to sprinkle vegetables to taste


  1. Cover sheet pan dish with double layer of baking paper and leave aside.
  2. In large bowl, combine fajitas mix, salt and chicken stripes and leave aside.
  3. Preheat the oven to 180 C / 356 F.
  4. Before you cut bell peppers to stripes, cut the bottom of two, to have 1 inch high bowls and place raw egg into each one. Leave aside.
  5. Cut bell peppers to stripes.

  6. Oil the baking paper and arrange the ingredients. Salt the vegetables and eggs to taste.
  7. Bake for 35 minutes.
  8. Serve immediately with tortillas, lime quarters and cilantro leaves.
