Lemon Yogurt Poppy Seed Cake is soft and moist Greek yogurt cake, with tangy lemon flavours and poppy seed to add some earthiness. Delightful cake with healthy agar flakes used for yogurt glaze!
Cut the parchment paper to fit the bottom and the side of a baking dish. Butter the paper lightly.
In a large bowl, mix all the dry cake ingredients.
In medium sized bowl, whisk the egg whites with the pinch of salt until foamy.
Preheat the oven to 356 F / 180 C.
Combine fresh lemon juice, lemon extract, vanilla extract, yogurt and butter.
Whisk dry and wet ingredients to get smooth batter.
Fold in egg whites using spatula to keep as much airy bubbles to get soft and creamy batter.
Pour the mixture into the baking dish.
Bake for about 20 minutes or until the toothpick comes out clean from the middle of the cake.
Let it cool a bit and place it on the plate. Leave it to cool completely.
In a small pot, mix all the ingredients for the yogurt glaze and bring to boil.
Boil on medium heat for one minute and gently pour over the cake.
Garnish with poppy seeds and poppy flower.
