This version of tiramisu recipe is everything but traditional. With all the ingredients mentioned, it contains almonds and grated chocolate. Once cooled for at least eight hours or overnight, it brings light and low sugar hot summer desert. Needless to say, you don’t have to turn your oven on if you use sponge cake layers ready to use.

It does not ask for Savoiardi although you may use them. If doing so ,I suggest you make a simple squared dessert instead of rounded cake I presented. It is much easier to create your version of this delicious dessert then.

The hardest part during the process was to grate chocolate. The temperatures are so high that our air condition works without a break but the air is humid and my hands were hot so I needed to cool the them with ice to prevent chocolate to melt during the process.

Ingredients

  • Ingredients for orange syrup:
  • 1 Tbsp fresh orange zest
  • ½ cup fresh orange juice ( 1 orange )
  • 1 tsp Arancello
  • 1 Tbsp sugar
  • Ingredient for figs filling:
  • 3 dried figs, chopped
  • Pinch of cinnamon powder
  • 1 Tbsp vanilla extract
  • 1/3 cup red wine
  • ½ Tbsp sugar
  • 3 fresh figs, peeled, chopped
  • Ingredients for cheese filling:
  • 2 eggs, separated
  • 2 Tbsp powdered sugar
  • Tbsp Mascarpone
  • 1 Tbsp orange syrup
  • Other ingredients:
  • 3 ready to use unflavoured sponge cake layers (each 1.5 cm/ 0.60 inches thick); 7.5inches in diameter
  • 10 Tbsp chopped almonds (roasted)
  • 100 grams dark chocolate

Instructions

  1. In small pot, combine orange zest, orange juice, Arancello and sugar. bring to boil on low heat and let it boil for 2 minutes. Leave aside to cool.

  2. In medium sized pot, combine chopped dried figs, cinnamon powder, vanilla extract, red wine and sugar.Bring to boil on low heat. Let it boil for 3 minutes. Add chopped fresh figs and boil it all for 8 minutes to reduce liquid a bit. Leave aside to cool.

  3. Finely grate dark chocolate using box grater's finer side.

  4. If you haven't roasted your almonds, do it in a flat frying pan until they become golden brown. It should take 12 minutes all together.

  5. Whisk 2 egg whites with2 Tbsp powdered sugar until stiff peaks form. Leave aside.

  6. Mix egg yolks with Mascarpone and 1 Tbsp of orange syrup.

  7. Gently combine egg whites with Marcarpone mixture using spatula.

  8. Now, start your assembling by placing your first cake layer on serving plate.

  9. Sprinkle it with 2 Tbsp of orange syrup all over the surface.

  10. Cover with 1/3 of Mascarpone filling, spread with ½ half of fig filling and top with 3 Tbsp almonds and 3 Tbsp grated chocolate.

  11. Repeat the same steps with second layer and once the third layer is on it's place, sprinkle with orange syrup, cover with cheese filling and garnish with the rest of almonds and grated chocolate.

  12. Garnish with fig slices.

  13. Leave to cool at least for 8 hours or overnight in the fridge.
