Everybody loves this Italian bell pepper salad recipe. The reason to this is how versatile this vegetable is, once roasted. Adding different herbs like basil leaves, garlic, wine vinegar, virgin olive oil, ground Mediterranean herbs, pine nuts, chopped walnuts, Feta, ground black peper and so much more!

How to make roasted pepper salad?

Aside from so many ways to put together all the ingredients you prefer, bell peppers can be roasted in  the oven, on grill or on the stove top as I do once the days are colder:

Whichever way you choose, we highly recommend wrapping your roasted peppers in plastic bag so steam makes it much easier to peel and seed your peppers before you slice them and make a bowl of salad.

For this occasion, we agreed to make simple version, using extra virgin olive oil, salt, chopped garlic and few drops of Plum Vinegar from Scratch .

 

While roasted pepper was steaming, I fried drumsticks to serve with.

What goes well with bell peppers?

Once we get fresh bell peppers, we enjoy crunchy bites, served with Feta slices or any other cheese, prosciutto, olives, tomatoes, and rye bread or artisan bread or fantastic  lard bread . Bruscetta bites sprinkled with virgin olive oil and slices of roasted peppers are great snack for hot summer days, too.

Ingredients

  • 6 bell peppers,various colours
  • 2 Tbsp olive oil to roast
  • Salt to taste
  • Garlic to taste
  • Olive oil and herbs to taste for the salad

Instructions

  1. Prepare large skillet and add 2 tablespoons of olive oil. Warm it and place your bell peppers into the pan.

  2. Roast your peppers on medium heat for 30 minutes, turning them occasionally to get brown skin all over.

  3. Once done, replace them in plastic container or bag to steam. Leave them closed for 30 minutes. It makes them easier to peel.

  4. Once you peel and seed them, you may serve them with oil, salt, chopped garlic and herbs to taste.
