If you are looking for an apple with a firm texture and a sweet and tangy taste, the Gala apple is a good choice. If you are looking for an apple that lasts a long time and is delicious, Fuji apple is a good choice. Not any bitter aftertaste to the skin.

How to make this cinnamon apple cider bread?

First you prepare your loaf pan and leave it aside. In one medium sized bowl, you combine dry ingredients: flour, baking powder, salt, powdered cinnamon and ginger, and sugar.

Start adding eggs, one at a time, butter (not melted butter but sliced), fermented apple cider, and sour cream.

In small bowl, combine chopped apples with lemon juice. Fold them into the batter, gently, using spatula. Pour into prepared pan and bake for 45 minutes.

As for quick bread glaze, you may prepare it a day earlier. You may find it a bit thicker the other day. To solve the problem, simply add few drops of milk to it, stir to get smooth texture and pour over the bread before cutting the slices. The best!

Ingredients

  • 2 cups all purpose flour
  • 1 Tbsp baking powder
  • Pinch of salt
  • 1 tsp ground cinnamon
  • ½ tsp ginger powder
  • 3 ½ Tbsp unsalted butter, room temperature, sliced
  • 2 ½ Tbsp sour cream
  • ¾ cup white sugar
  • 3 eggs
  • ½ cup fermented apple cider
  • 3 apples, peeled,cored and chopped ( Granny Smith )
  • 1 Tbsp fresh lemon juice
  • Ingredients for cinnamon glaze:
  • 7 Tbsp powdered sugar
  • ½ tsp ground cinnamon
  • 3 tsp milk

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. Grease and cover with baking paper a 9 x 5 inches bread pan.

  3. In medium sized bowl, combine flour, baking powder, salt, cinnamon, and ginger.

  4. In large bowl, mix butter and sugar. Add eggs, one at a time. Add, dry ingredients and liquid ones (apple cider and sour cream). Mix until combined.

  5. Gently combine chopped apples with lemon juice and fold into the batter, using spatula.

  6. Pour the batter into the bread pan and bake for 45 minutes or until toothpick inserted into middle comes out clean.

  7. Leave to cook for 15 minutes and take the bread out to cool completely.

  8. In a mug, combine icing sugar, cinnamon, and milk to get smooth glaze.

  9. Drizzle the glaze over the top of cool bread before cutting the slices.
