To finish this year’s Chestnut Trilogy, here we have Chestnut Truffles, no bake delicacy, made in 20 minutes.
If you have seen my previous posts on chestnuts ( Chestnut flour Cookies and Vegan Chestnut Soup ), I wrote there about some history, health properties and boiling chestnuts.
What is left, so far, is roasted chestnuts details, very popular European street food in the winters. Roasting does not require peeling. It is necessary to score the fruits before to prevent their exploding during the process of roasting which may be dangerous especially if your pan is left uncovered !
What does scoring the chestnuts mean ?
Scoring is cutting the lines on the surface of what you are cooking ( chestnuts, meat, potatoes, even Brussel sprouts ).
It speeds cooking time and makes better texture ( this way you increase surface area and gets more crispy exterior ). Also, it leaves more room for condiments of any kind.
Once you buy your paper bag portion of freshly roasted chestnuts, you may burn your fingers easily ! They are hot ! But, once you peel them, you enjoy their delicate, sweet, nutty flavour. Mulled wine is your perfect match for your portion of December street food 😊
This Chestnut Truffles is an easy no bake chocolate chestnut dessert. Once you make chestnut puree balls, you need some melted chocolate, dip each ball in it and leave to rest on baking sheet or platter.
We prefer and highly recommend you keep the truffles refrigerated before serving.
Since there is no calories counting when indulging these chestnut chocolate truffles, the best way for me to serve them is this one ( loaded with whipped cream ) :
If your choice is to skip bitter chocolate and coat the truffles with any other ingredient, you may roll them in cocoa powder, mini chocolate chips or icing sugar. Sprinkles are also great option for kids to enjoy this recipe. Whatever you coat them with , it is an easy truffle recipe.

- Boiled chestnuts or store bought chestnut paste is great to make chestnut hummus to serve as apple slices or chocolate cookies spread. Add a bit of lemon zest and whipped cream to your chestnut paste and there you have perfect topping. Just make sure to have some melted chocolate aside to garnish those little bites with !
Chestnut Truffles

Ingredients
- Ingredients for truffles :
- 1 cup chestnut paste ( approx. 250 grams )
- 1 Tbsp dark rum
- 1 Tbsp icing sugar
- Ingredients for chocolate ganache:
- ½ cup semi sweet chocolate chips ( 100 grams )
- 1 Tbsp water
Instructions

Combine chestnut paste, dark rum and icing sugar in a medium sized bowl, using tablespoon. You may also do it in food processor.

Prepare shallow plate to place truffles once rolled.

Grab 2 tsp of chestnut mixture and form a ball between your palms. Place each ball on the plate and leave to rest in the fridge for two hours or overnight.

Melt chocolate chips and water, stirring constantly to get thick chocolate mixture.

Dip each chestnut bowl into the chocolate and leave to cool.

Keep refrigerated before serving.
