Mint Chocolate Chips Ice Cream Bread

This Mint Chocolate Chips Ice Cream Bread recipe was in my head for quite a long time.
Our Banana Ice Cream Bread is so tasty and so popular that I decided to make another one, perfect for summer breakfasts, Christmas and St. Patrick’s Day. It is easy to make.
You need plain mint ice cream without chocolate chips, mint essence, chocolate chips, heavy whipping cream as the base and here you have great surprise, done in several minutes.
I used ice cream sandwiches to take the ice cream out since I couldn’t find a box of mint ice cream colored green.
I took the cream out and treated myself with cookies. I could have also made ice cream cake but, bread, not overloaded with sugar is something I could bring to work and have another day for breakfast with some coffee.
On the photo, you see that bread is covered with thick layer of chocolate ganache.
For that, you need semi sweet chooclate chips. It makes this bread so tasty ! And if you consider some whipped cream and mint chocolate aside, you have a great dessert.
To make batter for this breakfast treat that could easily turn into dessert, I used egg whites only so once ready to bake, you have cake batter, angel cake alike, so light and fluffy and so guilt free since there are no egg yolks.
So there are two more things, important to say here :
1. You may bake this one in spring form pan, just adjust baking time, and

Ingredients
- 1 cup 00 flour or cake flour
- 1 ½ tsp baking powder
- 3 egg whites
- 2 Tbsp white sugar
- ½ cup mint ice cream
- Mint extract to taste
- 1 Tbsp heavy whipping cream
- ½ cup semi sweet chocolate chips
- Ingredients for Chocolate ganache:
- 6 Tbsp thick cream
- 6 Tbsp chocolate chips
- 4 Tbsp water
Instructions

Preheat the oven to 180 C / 356 F and cover 3.5 x 7 inches bread dish with baking paper. Spray the paper and leave the dish aside.

In a bowl, combine flour and baking powder. Leave aside.

In medium sized bowl beat egg whites and sugar until stiff peaks form. Slowly add ice cream, flour mixture, mint extract, heavy whipping cream and chocolate chips and gently fold using spatula.

Pour into the bread dish and bake for 25 minutes.

Take out of the oven and cool before serving.

While bread is cooling make ganache: combine all the ingredients in a thick bottom pot and melt until well combined and smooth.

Spread ganache over the bread before serving and enjoy.
