Mascarpone matches nicely with blueberries and makes Blueberry Mascarpone Galette Recipe creamy and rich in taste.

I have made this galette several times and tried to wrap filling and fruits in store bought pie dough. The taste is also great.

For this dessert, I recommend using Mascarpone instead of Ricotta since Ricotta has much more water while Mascarpone has buttery texture. It is important that the bottom of galete remains dry once bake :

In case you would like to make Mascarpone at home, let me say, it is not as difficult as you may think. The best instructions I have seen are here .

 

If it is difficult for you to find a cheesecloth, Joshua Engel ( Quora ) says:

There are lots of alternatives. A coffee filter will work, slowly. A fine mesh sieve will work fast (too fast; you’ll lose some of your cheese). People have even used pantyhose or cloth napkins.

During the process of preparing this blueberry mascarpone galette, I usually have problem with overlapping the edges of the dough. If it doesn’t stick firmly, you may use toothpicks to keep the shape you want:

Once you put your mascarpone galette together, you may some dough left. I suggest you cut little flowers out of the leftovers to garnish the top, before or after baking. If you do so, brush them with milk also and sprinkle with brown sugar. If you bake some of them separately, next to your galette, take them out when golden brown on the top.

It takes about 5 – 7 minutes.

To avoid soggy galette bottom, sprinkle the dough bottom with cornstarch, tapioca or flour so it absorbs the juices while gallete is in the oven and prevents the crust to become too moist. It usually happens with high water content fruits.

Ingredients

  • Ingredients for the crust:
  • 1 Β½ cup flour, all-purpose
  • 1 stick butter, unsalted
  • 4 Tbsp sugar
  • 2 egg yolks
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 Tbsp milk
  • Ingredients for filling:
  • 1 cup Mascarpone
  • 2 Tbsp powdered sugar
  • 2 cups fresh blueberries
  • 3 Tbsp milk and 1 Tbsp brown sugar for the crust

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. On a clean working surface, combine, using your hands, all the dough ingredients and leave aside.

  3. In a small bowl, using spoon, mix Mascarpone and powdered sugar.

  4. Cover baking sheet with parchment paper and spray it with oil.

  5. Lightly flour the working surface and roll the dough to have a circle of 15 inches in diameter.

  6. Move the rolled dough on the baking sheet and cover it with Mascarpone mixture leaving approx two inches border all around.

  7. Arrange blueberries on cheese and overlap and fold the dough.

  8. Press where overlapping. Secure with toothpicks to fix the dough, if necessary.

  9. Brush with milk over the folded dough parts.

  10. Sprinkle brown sugar over the folded dough.

  11. Arrange with cutout flowers, brush them with milk and sprinkle with brown sugar if you made any using dough leftovers.

  12. Bake for 23 minutes until golder brown.

  13. Cool and serve with vanilla ice cream.
