I made some changes but the idea of making crescents with finely grated carrots remains the same.

This crescent recipe is not puff pastry dessert. The dough is made of lard and carrot mixture as the base, so the dough is flaky and crisp.

To be back to our stuffed crescent rolls, please have in mind that any filling is all right to use; jams especially.

 

Here you can see one circle rolled out to have 11 inches diameter, cut to have 8 pizza style cut crescents. I covered the dough with Nutella after I cut the dough. I did it so to avoid Nutella leaking while in the oven. ½ tsp of Nutella is enough for each crescent.

Carrot Crescents with Nutella

Ingredients

  • 2 cups finely grated carrots ( 3 large carrots )
  • 2 ½ cups all purpose flour
  • 2 tsp baking powder
  • Pinch of cinnamon
  • 12 Tbsp lard
  • Nutella or your favourite jam for filling the crescents
  • Icing sugar for dusting

Instructions

  1. In medium sized bowl, mix, using spatula or spoon, flour, baking powder and cinnamon.

  2. On a flat, clean working surface, quickly combine carrots, flour mixture and lard, using your hands.

  3. Divide the dough into two balls and refrigerate for 30 minutes.

  4. Cover two sheet pan baking dishes with baking paper and leave aside.

  5. Roll out first dough to get a circle, approx. 11 inches in diameter.

  6. Preheat the oven to 180 C / 356 F.

  7. Cut the circle into eight triangles ( as if cutting a pizza ).

  8. Spread a thin layer of your favourite spread on each triangle. I used Nutella.

  9. Roll each triangle starting from the outside toward the center.

  10. Place crescents on a baking pan ( eight per one dish ) and bake for 25 minutes.

  11. Let them cool completely on the baking dish, remove to the serving plate and dust with icing sugar before serving.
