I believe every food blogger enjoys buying food related product whenever s/he travels.
May it be recipe book, apron, spices, kitchen utensils, tea towels, dishes, to name just a few.
During our stay in Ireland, we did the same thing: my son picked Red Velvet Cake Mix while I was looking for clotted cream to taste it and compare to what we are used to.
So, that is how Betty Crocker’s cake mix arrived to our kitchen.
This batch of Red Velvet Cheesecake Bars is made without ricotta or mascarpone.
I used cottage cheese, lumpier than ricotta:
To get ricotta consistency, you may blend the cottage cheese and get creamy texture.
It gives healthier version of this dessert since cottage cheese is an excellent source of proteins, B vitamins, calcium and selenium.
Once done, Red Velvet Cheesecake Bars made with cottage cheese are super tasty, super moist and no one noticed the difference.
That’s what I like about eating healthy !

Red Velvet Cheesecake Bars
Red Velvet Cheesecake Bars : irresistible, decadent, super moist, festive yet simple to make.
Ingredients
- Ingredients for red batter:
- 1 Red velvet cake mix
- 7 Tbsp vegetable oil
- 200 ml water
- 3 eggs
- Ingredients for cheese batter:
- 3 cups cottage cheese, firmly packed
- 3 eggs
- 8 Tbsp vegetable oil
- 6 Tbsp white sugar
- 1 Tbsp vanilla extract
- 1 cup sour cream
- ΒΌ cup instant vanilla pudding mix
- Dusting sugar to serve,optional
- Butter for the pan
Instructions

Preheat the oven to 170 C / 340 F.

Butter 12 x 7 inches pan and cover the bottom with baking paper. Leave aside.

In medium sized bowl, mix cottage cheese to get creamy texture.

Add eggs, vegetable oil, sugar, vanilla extract, sour cream and instant vanilla pudding mix. Mix to get creamy texture. Leave aside.

In another medium sized bowl, prepare red batter according to the package instructions. My version asks for oil, water and eggs as mentioned above.

Pour red batter into the baking dish. Then pour cheese batter and bake for 42 minutes or until toothpick inserted into middle comes out clean.

Cool completely and cut to serve.

Dust with icing sugar, optionally.
