Beef Bouillon Soup from Scratch has always been one of the staples in my grandmother’s kitchen.
Both my mother and me preserve the heritage hoping future generations will do the same, supported by our examples.
Kitchen, not living room has been our central space of the house. If you wanted to hear the latest news, you didn’t have to turn your TV on. Girls knew everything. You just had to be there, sit somewhere, assist as much as you could depending on your age and that’s the way it worked.

After my mother took over the “kitchen business“, things has changed a bit.
She started to work five days a week and we had a nursemaid taking care of us and preparing two meals a day, from scratch.
Weekends were made for fun. And cooking with our mother.
Bouillon Soup from Scratch was done in the largest pot; a portion was served with some pasta as hot hors d’oeuvre. I added some raw Christmas pasta while shooting to show how easily kids could be hooked to a bowl of this healthy soup.
It could also be ladled to add special taste to meat loafs, stews, French onion soup, minestrone, stews, gravy, creamy pasta….. almost everything.
Vegetables from the largest pot were strained using fine mesh strainer ( I use chinois ) so you add them to the soup, once served, according to your taste ( on my photo, you can see Christmas Pasta Tricolore.

Our experience tells the best way to keep bouillon last longer is to keep it in the fridge.
Make sure to take the vegetables out, once bouillon is cooled. If you leave them inside ( carrots especially ) they definitely spoil the taste ( bouillon becomes sour but unhealthy, untasty way).
So, when you gather all the necessary ingredients, first thing I suggest you do is grill /roast ½ of the onion. I simplify this step and do it on the gas stove top and it looks like this :

Is beef broth the same as beef bouillon ?
Broth in English, bouillon in French, brodo in Italian, are almost the same. They are meat based food with vegetables and herbs, simmered in water.
How do you make beef stock with cubes ?
If you’re making beef soup or beef gravy, you’re going to need beef broth. Making beef broth from bouillon cubes is a lot faster than making it from scratch.
You can substitute bouillon cubes or granules in most recipes that call for broth or stock. The recommended equivalent measure is to dissolve 1 bouillon cube (or 1 teaspoon of bouillon granules) in 8 ounces of boiling water for every 1 cup of broth.
Which bone broth is healthier, chicken or beef ?
Both are great sources of amino acids, collagen and gelatin. Chicken will have more hydrating minerals like potassium, magnesium and phosphorus, while beef has more collagen.
Are bouillon cubes natural?
They are made of vegetables and so easy to make. Aside from skipping the major salt content in store-bought versions, you’re getting positive health benefits of vitamins and minerals in your bullion cube.
Can I use beef broth for chicken soup?
The best way to do it is to use the chicken broth to complement the beef broth, not the other way around. This is because the beef broth can quickly overwhelm the mild chicken flavors.
Do you eat or drink soup ?
Soup is liquid food, served warm or hot during colder days but also cold during summer. It is made by combining ingredients of meat or vegetables with stock, milk, or water. Hot soups are additionally characterized by boiling solid ingredients in liquids in a pot until the flavors are extracted, forming a broth. If the soup is creamy or without pasta and cut vegetables in it, you may drink it. However, in most of the cases, people eat it using table spoon.
What can be used as a substitute for vegetable soup ?
Chicken, beef, or lamb stock can be used in place of vegetable stock in most recipes. The specific type of stock to use can be decided by the chef based on the recipe it is being used in.
Can I use a frozen chicken to make homemade chicken soup ?
Absolutely ! You can add frozen chicken to the pot straight from frozen; be it whole chicken or previously cut parts. Cooking time depends on the site of your frozen meat. It has to be fully cooked. Once your soup starts to boil, make sure to skim the top of normal skum that appears.

- ½ grilled onion
- 1 lb Entrecôte ( intercostal meat )
- 1 parsley root
- 4 carrots
- 1 kale leaf
- ¼ celeriac
- Salt, black pepper to taste
- ½ bouillon cube
- 7 cups water
- Fresh parsley and oregano leaves to taste
- 1 Tbsp tomato passata
In large, 9 inches wide, thick bottom pot, put all the ingredients except tomato passata and let slowly boil for 1 hour and 25 minutes.
Add tomato passata and boil for another 5 minutes.
For the best results, I suggest you separate bouillon from vegetables and meat as soon as it cools. Keep in the fridge.
