Beef Bouillon Soup from Scratch has always been one of the staples in my grandmother’s kitchen.

Both my mother and me preserve the heritage hoping future generations will do the same, supported by our examples.
Kitchen, not living room has been our central space of the house. If you wanted to hear the latest news, you didn’t have to turn your TV on. Girls knew everything. You just had to be there, sit somewhere, assist as much as you could depending on your age and that’s the way it worked.
Our celebrities were living in our town 🙂
After my mother took over the “kitchen business“, things has changed a bit. She started to work five days a week and we had a nursemaid taking care of us and preparing two meals a day, from scratch.
Weekends were made for fun. And cooking with our mother.

Bouillon Soup from Scratch was done in the largest pot; a portion was served with some pasta as hot hors d’oeuvre. I added some raw Christmas pasta while shooting to show how easily kids could be hooked to a bowl of this healthy soup.
It could also be ladled to add special taste to meat loafs, stews, gravy, creamy pasta….. almost everything.
Vegetables from the largest pot were added to soup, together with pasta ( on my photo, you can see Christmas Pasta Tricolore.

Entrecôte, once cooled, was cut to cubes and served as salad the other day. If you are interested how to make this tasty beef salad look here.

Our experience tells the best way to keep bouillon last longer is to keep it in the fridge. Make sure to take the vegetables out, once bouillon is cooled. If you leave them inside ( carrots especially ) they definitely spoil the taste ( bouillon becomes sour but unhealthy, untasty way).
So, when you gather all the necessary ingredients, first thing I suggest you do is grill /roast ½ of the onion. I simplify this step and do it on the gas stove top and it looks like this :

Ingredients

  • ½ grilled onion
  • 1 lb Entrecôte ( intercostal meat )
  • 1 parsley root
  • 4 carrots
  • 1 kale leaf
  • ¼ celeriac
  • Salt, black pepper to taste
  • ½ bouillon cube
  • 7 cups water
  • Fresh parsley and oregano leaves to taste
  • 1 Tbsp tomato passata

Instructions

  1. In large, 9 inches wide, thick bottom pot, put all the ingredients except tomato passata and let slowly boil for 1 hour and 25 minutes.

  2. Add tomato passata and boil for another 5 minutes.

  3. For the best results, I suggest you separate bouillon from vegetables and meat as soon as it cools. Keep in the fridge.
