Every single ingredient in this Perfect Lasagna Soup speaks for itself: so full of north Mediterranean traditional flavours and spices that made you fall in love with lasagna bake, at first place !
Olive oil, fresh garlic and onion, Ricotta or cottage cheese, pasta … oh boy ! And on the top of it all : Italian sausage !
If you add this pork and beef sausage to your soup, you also get rosemary, majoram, origano, savory, thyme, basil and cilantro since the sausages are made with them. If you decide to use spicy sausages version, pepperoncini are included as well.
So here you have the whole bunch of herbs that definitely make an irresistible, comforting treat.
It is winter comfort food, I agree, but we have soups all year round. What I change with this one as with most of the soups, is the serving temperature : hot in winter and room temperature when the heat is on. Here are some of our favorite soups we enjoy every season:

Perfect Lasagna Soup : home made is the best !
Ingredients
- 1 Tbsp olive oil
- 1 cup Italian sausage, casings removed
- 2 garlic cloves, chopped
- ½ onion, chopped
- Salt to taste
- ½ cup tomato paste
- 2 ½ cup water
- ½ bouillon cube
- 10 lasagna noodles, halved
- 1 tsp parsley, chopped
- 1 pepperoncino, optional
- Ricotta ( or cottage cheese ) and parmesan to taste
Instructions

In a large pot, heat 1 Tbsp olive oil and add Italian sausage. Cook until lightly brown.

Add garlic and onion and saute for 2 minutes. Add water, tomato paste, salt and bouillon cube and boil for 5 minutes.

While the soup is boiling, cut lasagna noodles to halves. Add them to the soup and boil for another 12 minutes.

Ladle the hot soup into bowls and dollop a scoop of Ricotta or cottage cheese on the top. Garnish with parmesan and parsley leaves to taste
