Lavender Blueberry Double Chocolate Muffins : perfectly matched blueberry and lavender muffins with lots of chocolate.
There is a whole list of perfect matches of fruits and herbs just like there are complementary colours that create perfect union. I was thrilled to see that blueberries and lavender fit together perfectly.
It was an impulse for me to combine vintage chocolate sheet cake with some blueberries and lavender, muffins shaped and top them with perfect chocolate ganache.
To keep the muffins in one piece after baking, there are only three blueberries in each muffin but I added more on the top.
I published these Lavender Blueberry Double Chocolate Muffins four years ago and the only reason I repost them is experimenting with recently found weathered board and different light source.
It comes from completely different sides and I was curious to see the outcome.
The ingredients are absolutely the same but I have converted table spoons into cups ; as I spotted the quantities written in table spoons for 12 muffins I have understood it needs to be changed, immediately .
You know, I have an academic degree in technical sciencies and precise calculations and measuring are not a strange thing to me but the point is in simplifying things, agree ?
So, once I’ve got everything in right place, I decided to repost. It would be such a waste not to turn some attention to these perfect bites especially when the markets are bursting with blueberries and lavender.
When developing recipes with food grade oils like lavender, orange flower or spearmint please have in mind that only a drop or two is enough. For this batch one single drop of lavender oil is enough. You may substitute it with one third tea spoon of dry lavender flowers.
If you love cooking with lavender here is another lavender muffins recipe, quite popular one, that has pushed me to develop this one :
