Has it ever happened you find several slices of pepperonis, olives, cheese and tomatoes in the fridge ?
If your answer is „ of course „, this Pizza Pasta Salad Recipe is absolutely perfect way to use them all for tasty week dinner and / or office lunch, especially during hot weather season.
The choice of ingredients is all on your own to combine. You can use whatever you have in the fridge: prosciutto or bacon, rotisserie chicken, bell peppers of any colour, your favourite pasta shape ( smaller is the best ), cheese left once pizza was done; almost everything makes it work so it is so frugal and budget friendly and I find it perfect to make every season whenever there is half prepared food left in the fridge.
Mediterranean spices are often mentioned in my posts. Instead of store bought package, you can make a mix on your own.

Pizza Pasta Salad Recipe
Pizza Pasta Salad Recipe : quick and easy summer week dinner or office lunch.
Ingredients
- Ingredients for dressing:
- 1 Tbsp Mediterranean spices mix
- 1 garlic clove, finely chopped
- ½ tsp salt
- Ground black pepper to taste
- 2 Tbsp apple vinegar
- 4 – 5 Tbsp olive oil
- Ingredients for salad:
- 3 ½ cups pasta ( small fusilli )
- 1 ½ cup semi hard cheese cut into ¼ cubes
- 1 green bell pepper,seeded and diced
- 1 cup pepperonis, quartered
- Green olives to taste, halved
- 10 cocktail tomatoes, quartered
- White and purple onion, sliced, to taste
- 3 Tbsp Parmesan to garnish
Instructions

Combine dressing ingredients and leave aside.

Cook pasta in salted water, drain and cool.

In a large bowl, combine cheese, pasta, bell pepper, onions, pepperonis and dressing using spatula or hands.

Add olives and tomatoes at the end and gently combine.

Garnish with parmesan and serve.
