Nutty, earthy flavours and addictive spices always remind me of African cuisine and it’s seducing creativity.
While assisting our family’s „African branch“ when cooking I realized they have upgraded hummus to new level by adding yogurt, Berbere spices mix and pine nuts. On the top of it, they bake it to get nice crusty dip to serve while still warm with crackers, grapes and yogurt.
I did not know much about African continent until people speaking languages I have never heard before ( later on, it turned out it was French they were speaking ), entered into our house and our lives when I was a little girl. It was different from everything both me and my sister have ever met before.
The excitement was in the air; we were so looking forward to new people and were so curious about their languages and music they have brought into our home.
But the first thing I noticed and still remember was the fragrance of oils they used for skin and hair treatments : so beautiful, nutty, warm and so much different from the fragrances we were used to.
So, some of them came to stay in our family are still important part of our lives and make us complete, every way.
I have mentioned Berbere spices mix and if it is not at hand to you, here are the spices you can combine to make it yourself: one teaspoon of paprika, chili, fenugreek , coriander, ginger, nutmeg, cumin, clove, cinnamon and cardamom.

Mediterranean Hummus Bake Recipe
Mediterranean Hummus Bake Recipe : nutty and spicy spread bake to serve with crackers, yogurt and grapes.
Ingredients
- 1 ½ cup chickpea, precooked
- 3 garlic cloves
- 1/2 cup lemon juice ( 2 small lemons )
- 5 Tbsp tahini paste
- 4 Tbsp olive oil
- 3 Tbsp greek yogurt
- Salt to taste
- 1 tsp Berbere spices mix
- Butter for the dish and to garnish the top before baking
- 2 Tbsp pine nuts and ½ tsp Berbere spices mix to sprinkle before baking
Instructions

Preheat the oven to 392 F / 200 C.

Butter 5 x 6 x 2 inches dish and leave aside.

Combine chickpea, garlic, lemon juice, tahini paste, olive oil, yogurt, salt and spices to get smooth paste.

Spoon the paste into the baking dish, even the top of it, sprinkle with pine nuts and spices and garnish with some butter cuts and bake for 15 minutes.

Serve immediately.
