Peanut Butter Amaranth Pops Bites: need a fix ? Use this mix !


Amaranth is an ancient grain, naturally gluten free, protein rich, and we use it quite often all summer long to prepare light lunches and combine cooked grains with vegetables and fish.

Science says it is a crop of the future since it is easily grown and has so many benefits to human nutrition.
Nowadays, amaranth grains are toasted like pop corns and mixed with honey or chocolate to prepare dessert named „Alegria“ ( „joy“ ).
Peanut Butter Amaranth Pops Bites are my twist for peanut butter Alegria lovers and it is easily prepared even if you don’t have amaranth pops at home.
To make them, use medium sized pan and warm it over medium heat. Once your pan is hot, add two tea spoons of raw amaranth and cover with a lid. Toss gently the pot and amaranth starts to pop just like corn when making pop corns. Empty the pot into the bowl and here you have amaranth pops for this no bake dessert.
I used store bought ones and here is a photo showing how pops should look like compared to raw grains:

The easiest way to prepare and chill the bites is if you lightly oil small muffin holes ( 24 holes pan ) and fill them with the mixture:

For the best results, leave in the fridge for two hours : it helps to thicken coconut oil, peanut butter and amaranth pops mixture and it is so much easier to take the bites out and serve.

To make the bites attractive, I garnished every one with a pinch of room temperature peanut butter and served.

Ingredients

  • 1 Tbsp coconut butter for the pan
  • 1 ½ cup amaranth pops
  • Pinch of salt
  • 4 Tbsp coconut butter, melted
  • 1 Tbsp honey
  • 6 Tbsp smooth peanut butter + extra for garnishing ( room temperature )

Instructions

  1. Oil the muffin holes of two 24 mini holes muffin pan since the quantity of ingredients makes 30 – 32 bites.

  2. In medium sized bowl, combine all the ingredients, using spatula.

  3. Fill the holes and leave in the fridge for two hours.

  4. To take the bites out, round each hole with small knife to take them out easier.

  5. Garnish with peanut butter and serve.
