Lemon Curd Blueberries Crumb Cake

Beautiful and popular combination of blueberries and lemon has inspired me to make this Lemon Curd Blueberries Crumb Cake. Since making curd lasts for 14 minutes, I made it the evening before ( two lemons are what you need ) and left to cool to be used next day. Preparation time for the whole cake includes 14 minutes needed to finish the curd :
Once done, you get 2 cups of curd. You need 1 Β½ cup to pour over blueberries. The rest was gone in the flash of light ! By spoon !
I suggest you do the crumb first and leave aside. Then, you butter 8 x 8 inches baking dish.
Whisk the batter, pour into the baking dish and bake for ten minutes; cover with fresh blueberries, spread lemon curd over it and sprinkle with the crumbs you prepared earlier. Another 25 minutes are necessary for the cake to be done :
This cake tastes the best if refrigerated before serving.

Ingredients
- Ingredients for lemon curd:
- Β½ cup fresh lemon juice
- 2 Tbsp lemon zest
- 1 cup + 2 Tbsp sugar
- 4 eggs
- 7 Tbsp unsalted butter
- Ingredients for lemon cake :
- 2 eggs
- Pinch of salt
- 2 Tbsp lemon juice
- 1 Tbsp lemon zest
- 4 Tbsp Greek yogurt
- 3 Tbsp vegetable oil
- 5 Tbsp sugar
- 9 Tbsp all purpose flour
- 1 tsp baking powder
- Ingredients for the crumb:
- 10 Tbsp all purpose flour
- 1 Tbsp lemon zest
- 5 Tbsp butter, unsalted
- Other ingredients:
- 1 tsp butter for the dish
- 1 Β½ cup fresh blueberries
Instructions

Whisk eggs, lemon juice and zest and sugar, in a pot, on medium heat. Whisking continuously, let it boil for 9 minutes.

Take away from the heat and add butter into the mixture.Mix well and leave to cool completely.

Butter the baking dish (8 x 8 inches ) and leave aside.

Preheat the oven to 180 C / 356 F.

Whisk eggs, salt, lemon juice and zest, greek yogurt and vegetable oil in medium sized bowl. add sugar, flour and baking powder.

Pour the batter into the baking dish and bake for 10 minutes.

Take the baking dish out, and spread fresh blueberries on half baked batter.

Dollop the lemon curd on the top and even with the spoon.

Sprinkle the crumb mixture over the curd and bake for another 25 minutes. Bluberries will start to bubble at the end of the process.

Take the cake out, cool it completely and refrigerate before serving.
