Classic Stuffed Bell Peppers Recipe : summertime comforting dish !

Before you start cooking Classic Stuffed Bell Peppers Recipe, please make sure to prepare the dish that four bell peppers fit into. My dish dimensions are 8 inches in diameter and 3 inches high. It is important to place bell peppers standing close to each other so the filling does not spill out.
That way you get four perfectly cooked stuffed bell peppers to serve. You may add some greens aside or warm tomato salsa to pour over the main dish but serving them with nothing else added makes great lunch or week dinner as well.

This version is a bit different than my grandmother used to prepare. By saying „ different“ I mean mine being simplified since she was slowly boiling stuffed bell peppers on the stove top, in a pot, completely covering bell peppers with Tomato Salsa ( spaghetti sauce ). What she used to make was a twist by stuffing bell peppers with meat balls and , as a result, the dish released amazing flavours.

Ingredients

  • 4 bell peppers ( any colour )
  • 2 Tbsp sunflower oil
  • 1 ½ cup cooked white rice
  • 2 cups ground beef
  • 5 Tbsp green onions, finely chopped ( two onions )
  • 2 finely chopped garlic cloves, optional
  • ½ bouillon cube
  • Salt and ground black pepper to taste
  • Dry origano to taste
  • ½ cup tomato sauce
  • ½ cup Mozzarella cheese, cubed + extra to cover stuffed bell peppers

Instructions

  1. Slice the tops off the peppers, clean the inside, and leave the bottoms and the tops / caps aside.

  2. Spray the baking dish aned leave aside as well.

  3. Preheat the oven to 180 C / 356 F.

  4. Put oil, beef, onions and garlic into the medium sized pan and cook untill meat gets golden. Stir often to separate meat.

  5. Stir in tomato sauce, bouillon cube, origano, Mozzarella, salt and ground black pepper to taste. Let it boil for minute or two.

  6. Place four bell peppers into the dish and spoon beef mixture into them.

  7. Place extra Mozzarella cubes on the top of the filling and top with bell pepper caps.

  8. Bake for 35 minutes and then take the caps off and bake for another 10 minutes.

  9. Take the stuffed bell peppers out, garnish with green onions and serve immediately.
