When started to combine the ingredients for Spicy Tuna Cakes Recipe, I wanted to wrap them in piadine:
Piadine are made of flour, water and lard and are a bit crumblier than tortillas. I usually make frittata with sausages and fold it into roasted piadina, add some herbs and it makes perfect Saturday lunch done in a flesh.
My son prefers fruits and spreads folded; doing brunch with fresh fruits for him, I do not expose piadina to heat but simply spread honey and sprinkle with fruit salsa before folding.
To me, there is no big difference between the doughs but it is easier to fold tortillas to make the wraps. If you are used to make both tortillas and piadine from scratch, you could hardly know the difference in taste. Except if you add some spices or herbs into the dough but then, it’s completely new levelβ¦
Tuna cakes are the product of what is left from the stocks I made for our spring lock down and it seems to be perfect way to use tuna. If you are interested in more canned tuna recipes I posted, here they are:

Spicy Tuna Cakes Recipe
Spicy Tuna Cakes Recipe : easy and quick brunch or easy Saturday lunch, everybody enjoys.
Ingredients
- 2 cans tuna in vegetable oil, once drained, makes 1 cup
- 2 eggs
- 5 Tbsp bread crumbs
- 1 garlic clove, finely chopped
- 1 tsp Mediterranean spices
- 1 Tbsp parsley leaves, finely chopped
- Chopped Peperoncino to taste
- ΒΎ Tbsp fresh lemon juice
- Salt to taste
- 2 Tbsp olive oil for cooking
Instructions

Combine all the ingredients for cakes, using fork, in medium sized bowl.

Heat olive oil in a skillet, on medium heat.

Form 6 balls and flatten to have rounded cakes.

Gently place the cakes in the skillet and cook until lightly browned, 4 minutes on each side.

Serve with your favorite dip or make tortilla wrap.
