This light and tender Cauliflower Bread Recipe is perfect way to use beautiful gentle cauliflower florets, a bit different but so tasty way.

Since this bread is savoury, guilt free and sugar free, it matches perfectly with slices of cheese, capers and olives, grilled vegetables or soups.

If you prefer to have simple, light and frugal snack, take a slice of bread with a glass of white wine.
This is exactly what I have done in the evening, after work.

Bread is very moist, tender and soft and you can combine it with anything you prefer since cauliflower will not take over the taste of the food you combine with it.
Before I even started to create this bread, I cooked cauliflower, left it to cool and made cauliflower rice, using fork.
Don’t worry: if you boil cauliflower florets al dente for nine minutes exactly, you will get cooked but firm florets so you get orzo sized particles while mashing.
Baby bell peppers can be replaced with any other coloured vegetables or herbs you prefer or you may prepare the bread without anything added. It is really up to your choice.

Since there were some baby bell peppers left, I grilled them, sprinkled with olive oil and aceto balsamico and served with smoked pancetta and some cheese.

Ingredients

  • 2 ½ cup cooked cauliflower, finely chopped with fork
  • 5 eggs, separated
  • 5 Tbsp sunflower oil
  • 1 cup all purpose flour
  • 1 1/3 Tbsp baking powder
  • 1 tsp salt
  • 4 mini green sweet peppers, finely chopped: gives 3 ½ Tbsp

Instructions

  1. Preheat the oven to 180 C / 356 F.

  2. Cover : 4 x 10 x 3 inches bread dish with baking paper, spray it and leave aside.

  3. In large bowl, mix egg whites and salt until stiff peaks form. Leave aside.

  4. In medium sized bowl, combine egg yolks, sunflower oil, bell peppers and chopped cauliflower.

  5. Combine flour and baking powder.

  6. Slowly add liquid and dry ingredients to egg whites. Combine gently using spatula. The mixture should remain fluffy.

  7. Pour batter into the bread dish and bake for 38 – 40 minutes.

  8. Leave to cool before serving.
