Almost four years ago I have made Chardonnay Chicken with Chili Dumplings but now, looking at the early works I understand how little I knew about taking food photographs. At the bottom of this updated one, you can see how it looked and whenever I spotted the old one, I just did not feel comfortable. It just does’t catch one’s eye.
Of course, I publish reall food which means we eat all the dishes you can find here at 2pots so I decided to take brand new photos one week end when I was making this one for our lunch.

My drive to do the photos again on one side is the fact that my taking photos has improved and, on the second one is how bad it would be if you do not pay attention to this great dish, twisted a bit since chili has noting to to with the gravy but is added to noodles batter.

The complete idea is not mine. It’s the composition. It is of common knowledge that wine added to meat while gently boiling gives an amazing flavour but chili noddles idea was suggested on the spices’ bag and, as you may guess, I got hooked immediately.

Ingredients

  • 1 lb chicken steaks
  • 1 Tbsp sunflower oil
  • 1 garlic clove, chopped
  • Thyme, salt and ground black pepper to taste
  • 1 cup white wine
  • Dumplings ingredients:
  • 1 cup all purpose flour
  • 1 cup sour cream
  • 1 tsp chili powder
  • Pinch of nutmeg, grounded
  • Salt to taste

Instructions

  1. Salt steaks to taste.

  2. In a frying pan, fry the steaks, add garlic and a pinch of thyme.

  3. When the steaks turn golden brown, add white wine and reduce the heat to medium so the ingredients combine well, slowly boiling for 15 minutes.

  4. While steaks are cooking , make dumplings mix of flour, sour cream, chili and nutmeg. If the mixture is too soft, add some more flour.

  5. In a pot, boil the water with the pinch of salt and start making noodles using teaspoon. Dumplings are ready when they raise to surface.

  6. Serve immediately.
