We love vegetables. Cauliflower Avocado Soup is always welcome and most of the times it is a main dish, followed by sweet bread or slice of cake.
To make the soup attractive, I garnished it with cubed avocado and pepitas oil.

After eating avocado, I usually plant a seed and let it grow on my balcony but after a while I give one away to a friend if s/he is interested to grow any new plants.

When making a soup, you can always substitute cauliflower with broccoli, carrots, pumpkin or sweet potatoes. The result is always a bowl of hearty comforting meal to eat all year round.

Cauliflower Avocado Soup

Ingredients

  • 4 cups cauliflower florets
  • ½ bouillon cube
  • ½ cup water
  • 2 Tbsp sour cream or vegan substitute
  • Salt and ground black pepper to taste
  • Avocado cubes and pepitas oil to garnish

Instructions

  1. In medium sized pot, boil cauliflower florets for 7 minutes. Strain cauliflowers and leave in a pot.

  2. In separate pot, boil ½ cup water with bouillon cube or vegan substitute to melt.

  3. Mash cauliflowers with immersion blender to get cauliflower puree.

  4. Add water, sour cream or vegan substitute, salt and ground black pepper to taste.

  5. Combine and let it boil for 2 – 3 minutes.

  6. Garnish with avocado cubes and pepitas oil and serve.
