This cauliflower avocado soup is easy to make and is so loaded with our favourite vegetable. We add sour cream to thicken it, but you can also replace it with vegan substitute so there you have vegan and cozy comforting food. For meat lovers, you can add shredded chicken roast or grated cheese and serve with crackers or dinner rolls.
We love vegetables. Cauliflower avocado soup is always welcome and most of the times it is a main dish, followed by sweet bread or slice of cake.
To make the soup attractive, I garnished it with cubed avocado and pepitas oil. It is also known as pumpkin seed oil.

After eating avocado, I usually plant a seed and let it grow on my balcony but after a while I give one away to a friend if s/he is interested to grow any new plants.
Also, when making a soup, you can always substitute cauliflower with fresh or roasted broccoli, carrots, pumpkin, or sweet potatoes. The result is always a bowl of hearty comforting soups to eat all year round.

Cauliflower Avocado Soup
Cauliflower Avocado Soup is creamy cauliflower soup ready in 30 minutes. Healthy comfort food garnished with avocado slices for the whole family to enjoy!
Ingredients
- 4 cups cauliflower florets
- ½ bouillon cube
- ½ cup water
- 2 Tbsp sour cream or vegan substitute
- Salt and ground black pepper to taste
- Avocado cubes and pepitas oil to garnish
Instructions

In medium sized pot, on medium heat, boil cauliflower florets for 7 minutes. Strain cauliflowers and leave in a pot.

In separate pot, boil ½ cup water with bouillon cube or vegan substitute to melt.

Mash cauliflowers with immersion blender to get cauliflower puree.

Add water, sour cream or vegan substitute, salt, and ground black pepper to taste.

Combine and let it simmer for 2 – 3 minutes.

Garnish with avocado cubes, sprinkle with pepitas oil and serve.
