Cashew Nut and Fruit Bars

For all the people that exercise these Cashew Nut and Fruit Bars are perfect to have while driving home afterwards but I do not exercise. Yoga only. In the morning.
For me, energy balls are perfect to pack for my office or to make them to have an additional treat on our cookie platter for holidays.
Golden coloured sugar makes them festive if you decide to dip the bars into chocolate ganache and sprinkle with it.
Cashew Nut and Fruit Bars
Cashew Nut and Fruit Bars : delicious and easy to do !
Ingredients
- Bars ingredients:
- 1/2 cup cashews, finely chopped
- 3/4 cup dried apricots, finely chopped ( 16 dry apricots )
- 1 cup dried figs, finely chopped ( 8 dry figs )
- 1/2 tsp pumpkin spice
- 7 Tbsp coconut oil, melted
- Ingredients for chocolate ganache:
- 2 Tbsp bitter chocolate chips
- 2 Tbsp thick cream
- 1 Tbsp water
Instructions

Cover small bread pan ( 3.5 x 7 inches ) with foil and spray it. Leave aside.

In a bowl, mix all the bars ingredients and remove into the bread pan.

Press and flatten the mixture using your fingers and leave in th efridge to cool for, at least, fro two hours.

Combine chocolate chips, thick cream and water until smooth.

Take the bars out, cut the bars 0.5 inch wide and dip the ends to chocolate ganache.

Garnish to taste.
