This rocky road recipe is somewhat smoother version of Milk Chocolate Rice Krispies Bars Β because of smooth Biscoff spread, melted chocolate and Biscoff cookies. No rice krispies.
How to make Biscoff Rocky Road?
It is one of the easiest no bake kid friendly desserts! You melt cookie butter, mini marshmallows, Biscoff spread, unsalted butter and chooclate in double boiler to get sticky mix.
To get an extra Biscoff flavour, you may sprinkle this Biscoff rocky road with extra crushed Lotus cookies and some mini marshmallows while your dessert is still warm. Then you just gently press the mixture into the pan and flatten with your wet or oily hands and refrigerate. How simple is that !?! One bowl recipe, all kids love!
When should I cut rocky road?
Take your dessert from the fridge after one hour and slice. Use a large sharp knife to cut the rocky road. It can be stored in an airtight container in the fridge for three weeks.

Ingredients
- 2 Tbsp unsalted butter
- 1 cup white chocolate chips
- 4 cups marshmallows + handful to garnish
- 2 Tbsp cookie butter
- 2 cups crushed Lotus Biscoff Cookies
- 3 crushed Lotus Biscoff cookies to garnish
Instructions

Cover 8 x 8 inches baking dish with parchment paper and spray it.Leave aside.

Place a large pot on a stove top, fill it up to 2/3 with water and cover with fitting heat proof bowl.

Stirring constantly using spatula, melt unsalted butter, chocolate chips, marshmallows, and cookie butter. You get sticky mixture.

Add crushed Lotus Biscoff cookies and combine.

Drop the mixture into prepared pan, oil your hands, press and flatten the mixture.

While still warm, you can garnish your dessert with marshmallows and crushed cookies to enhance Biscoff flavour.

Cool for one hour, cut to squares and serve.
