This breakfast bake could be easily turned into brunch or even lunch.

Basic ingredients for this Tortilla Chips Breakfast Bake are chili con carne and your favourite tortilla chips.

The bottom of the bake is keeping all the ingredients together: store bought puff pasty but could be substituted with any kind of pastry you like or tortillas.

Puff pastry, already rolled and wrapped in baking paper is our favourite when the heat is on and we tend to spend as little time in the kitchen as possible so this one became our new favourite meal this summer.

Ingredients

  • 1 Store bought puff pastry ( 10 x 16 inches )
  • 1 Tbsp sunflower oil
  • 1/2 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 ยฝ cup minced beef
  • 1 cup red beans, precooked
  • 1 cup sweet corn kernels
  • 2 tsp tomato paste
  • Dark chocolate to taste
  • 2 Tbsp Chili con carne spices mix
  • 1 cup semi hard cheese, grated
  • Salt to taste
  • Tortilla chips to taste
  • Avocado slices, cilantro, lime, quartered tomatoes to garnish

Instructions

  1. Roll out the puff pasty and lay on the sheet pan. If not originally rolled with baking paper, make sure to lay the pasty on baking paper. Leave aside.

  2. Pour oil into skillet and add garlic and onion. Cook on medium heat for a minute and add beef. Break it with fork or spatula. Cook until lightly brown.

  3. Add beans, sweet corn kernels, tomato paste, spices and salt. Cook and stir and add a bit of dark chocolate to taste. Combine.

  4. Spread meat mixture over puff pastry leaving ยฝ inch free on all sides.

  5. Sprinkle with cheese and overlap and fold the pastry, pressing the overlapping edges together.

  6. Bake for 15 minutes.

  7. Garnish with avocado, cilantro, lime and tomatoes and serve immediately.

By different, I mean it really needed to be worked on; it was waiting to be completed, nicely arranged and photographed.
