Have you ever made jam on your own? The flavours releasing during the process are wonderful. Once you get ripe peaches, this simple pectin jam recipe is great to start with.
If using vegan substitute for pectin, you can easily turn this canning recipe into vegan version.
We don’t find purple peaches at our street market that often, so I decided to buy some and make the best use of them; eating them fresh is great but making jam is perfect to have an easy spread for morning toast.

Do purple peaches have the same taste as yellow?
Both are bright and acidic, with firm flesh and a characteristically tangy flavor. Purple peaches have more firm flesh then yellow ones.
I grew up having jams spread on toast and glass of milk for breakfast. The other option was slice of bread and homemade salty butter with glass of hot cocoa. Heaven!

Few minutes later, polenta was ready and dropped into small bowl, using teaspoon. A second later it was covered with homemade white coffee. It was chicory version of coffee for my grandfather, without any caffeine.

Ingredients
- 4 cups washed purple peaches, cored, chopped
- 1 cup + 3 Tbsp sugar
- 1 tsp lemon acid
- 2 Tbsp sugar + 2 Tbsp pectin
Instructions

Combine 2 Tbsp sugar and 2 Tbsp pectin in a mug and leave aside.

In medium sized pot, on medium heat, boil purple peaches, sugar and lemon acid for ten minutes.

Add pectin and sugar mixture and boil, stirring constantly for four minutes.

Take away from the heat and store in clean and dry glass jars.
