The weather here is pretty unstabile but this has some advantages, of course. After couple of weeks of heat, we have colder days to rest for a while. Bad thing is that colder temperatures are preceded with serious storms that cause damages all over the place.

It seems to me we have to get used to it since everything changes rapidly. I am not exactly happy to see it, but here it is.
To make the best use of pleasant temperatures, I made Sheet Pan Chicken Fajitas for our Thursday dinner.
During the process, I tried to educate my son about fajitas being actually the ingredient of tacos but he was not impressed that much about it as I was.
Eggs in bell pepper bowls occupied his attention. That much about my enthusiasm and his eagerness to learn about the process. πŸ™‚

This quantity of food is way too much for two of us but I took the leftovers to my work the other day to warm up in microwave and am happy to say it is tasteful the second day, too.

Sheet Pan Chicken Fajitas

Ingredients

  • 1 Tbsp sunflower oil
  • 3 cup chicken breasts, cut to stripes (approx. 1.5 lb )
  • 4 Tbsp Fajitas mix
  • 1 tsp salt
  • 3 bell peppers: green, red, yellow
  • 1 purple onion, sliced to rings
  • 1 garlic head, halved
  • 2 eggs
  • Salt to sprinkle vegetables to taste

Instructions

  1. Cover sheet pan dish with double layer of baking paper and leave aside.
  2. In large bowl, combine fajitas mix, salt and chicken stripes and leave aside.
  3. Preheat the oven to 180 C / 356 F.
  4. Before you cut bell peppers to stripes, cut the bottom of two, to have 1 inch high bowls and place raw egg into each one. Leave aside.
  5. Cut bell peppers to stripes.

  6. Oil the baking paper and arrange the ingredients. Salt the vegetables and eggs to taste.
  7. Bake for 35 minutes.
  8. Serve immediately with tortillas, lime quarters and cilantro leaves.
