This croissant breakfast changes morning habits of the most difficult cases. I am the one of such a people: breakfast is the meal I tend to skip. There is no such a French toast bake or overnight breakfast casserole that would make me think twice.

I really love coffee and ristretto is what I sip and step into the day. My son is much wiser: he needs to eat something before his day starts. It has to be concrete dish, be it croissant breakfast casserole, sausage egg muffins, French toast or Panettone Leftovers Breakfast Bake for holidays.

Once I started to develop this Cannoli Croissant Breakfast Bake Recipe I really took care not to overpower it with sugar. I believe it is wrong to start your day with too sugary food.

And, once cooked I had one for breakfast with a glass of milk.  What a huge change of habits it was !

So, simple cream cheese mixture base is just like the one we use to stuff cannoli with and normal or mini croissants are great to fill, egg wash purpose is to get shiny golden crust and bake for 15 minutes only to have Italian style breakfast.

I did not use whole milk or heavy cream to pour over the individual stuffed croissant. I just left them ready to pick up from the baking dish and serve with favourite morning drink. Ristretto it was for me !

So, what is cannoli filling made of ?

Ricotta cheese is the base for cannoli filling. You add powdered sugar to taste. The taste is better if you add some Mascarpone or cream cheese. Orange or lemon zest makes it refreshing. Cannoli variations may include honey, cinnamon, vanilla, chopped almonds and chocolate chips.

Ingredients

  • 4 croissants, 4 inches long
  • 1 cup Ricotta / cream cheese
  • 1 Tbsp vanilla extract
  • Pinch of lemon zest
  • 3 Tbsp chocolate chips, semi – sweet
  • 1 Tbsp powdered sugar
  • 1 egg for egg wash
  • Butter for the dish

Instructions

  1. Preheat the oven to 190 C / 374 F.
  2. Take four croissants and make a horizontal cut in the middle of each one, using a sharp knife. Leave the top and bottom of each croisssant half connected. Leave aside.
  3. In small bowl, combine, using spoon, Ricotta, vanilla extract, lemon zest, chocolate chips and powdered sugar.

  4. Butter 7 x 5 inches baking dish.
  5. Fill the croisssants and place them into the dish.
  6. Glaze the croissants with egg, using kitchen brush.
  7. Bake for 15 minutes and eat while still warm.
