Armenian Overnight Oats with Pomegranate and Apricot is make ahead, healthy and colourful breakfast, perfect for those who have coffee first and then grab the package to go to work. That is why I leave the oats in glass jar overnight and cover to pack for work in the morning. Fruits you choose to combine with oats are really up to your choice.
Since Armenians traditionally use pomegranates and apricots in their tasty cuisine, I decided to use them both for this balanced breakfast.
I guess a question pops out and it’s why did I choose Armenian combination ?
Well, there is something magical about Armenians: Charles Aznavour was Armenian and, needless to say, I love his music very much ( my father takes all the credit for all that has anything to do with music, anyway ).
More I dive into their culture and Aznavour’s lyrics, more I like them.
There is another reason to use apricots : my parents have an apricot tree in their garden and it has been more than generous to us for all of the years and we had a lot of nice and pleasant moments over there watching apricot blossoms and picking the fruits later on.
Pomegranates bring another story : there is a book titled „Shadows of the Pomegranate Tree“ taking place in beautiful Granada, Spain that has driven me back to the end of 15th century and I fell in love with this beautiful and healthy fruit.
Second reason is that my friend has a big pomegranate tree in her garden and we sit in it’s shadow after swimming in her paradise bay and the third reason is the beauty of the fruit itself : just pure and perfect.
Armenian Overnight Oats with Pomegranate and Apricot
Ingredients
- 12 Tbsp rolled oats
- 1 cup hot water
- 3 Tbsp pomegranate seeds
- Slices of apricot ( canned halves in syrup ) to taste
- Mint leaves to garnish
Instructions

Combine rolled oats and hot water in clean glass jar ( 1 ½ cup volume ).

Place in the fridge overnight ( at least for 8 hours ).

In the morning, add pomegranate seeds and sliced apricots.

Garnish with mint leaves and enjoy.
